Tsuta: 1st Michelin-Star Awarded Ramen House



The long wait is finally over. Tsuta, the world's first Michelin-starred Ramen house in Tokyo had officially opened last December 16 at the Bonifacio High Street Central. Tsuta originated from Chef Oinishi Yuki ancestral home and the noodle itself is called Soba instead of Ramen.




The place can accommodate up to 40 pax with the bar seats in front of the kitchen to see how the Ramen is actually done. We ordered Shoyu Soba, Shio Soba and Char Siu Miso Soba.


Shoyu Soba (390php) - Char Siu (1 slice), bamboo Shoot, Leek and Truffled pureed in truffled oil. It has a light but well-flavored broth

Shio Soba (390php) - Char Siu (1 slice), bamboo Shoot, Leek and Green olives pureed in truffled oil. The green olives complemented with the broth.

Shiyo Soba

Char Siu Miso Soba (410php) - Char Siu (4 slices), early red onion, corn, beansprouts, hot sauce Porcini mushroom, oil and Watercress. It's not that spicy and if you are a spice lover, you need to request for an extra hot sauce for this one.

Out of the three Ramen that I've tasted, I liked the Shoyu Soba. The broth was light but well-flavored. The noodles were thin and firm. The Ramen itself is not everyone's cup of tea since many of us are used to have heavy, thick and creamy Ramen and this one is the complete opposite of what we used to eat.




Overall, we still enjoyed eating Ramen at this Michelin-star restaurant. They have a pretty fast serving time and the crew were accommodating to our needs.
